Fruit Cobbler

This recipe is from a sweet friend of mine, Shana, who blogs over at Prelude to Home . We ate this at her house recently and it was so good. We were in the kitchen chatting and I watched her make it. So simple and so yummy! When they came to our house last night to eat and pick up their oldest from a spend the night funtime, she offered to bring a dessert. After we hung up the phone, I thought, "Oh, I hope she brings the cobbler!" I wasn't disappointed! :)

Cover bottom of casserole with fruit of your choice (Shana used blueberries)
Add 1/3 cup water
Add 1/3 cup sugar
Cover with dry yellow cake mix
Melt stick of butter and pour over the top

She didn't tell me about the baking part and now she isn't answering the phone...hhmmm, I'm guessing 20-25 minutes at 350 oughta do it ;)

This is one of my oldest son's favorites and considering he can be finicky that tells you it is good!

3 pounds ground beef
2 pks taco seasoning
4 large burrito shells
1 large can refried beans
16 oz sour cream
1 jar your favorite salsa
2-3 cups shredded cheese

Brown, drain and season ground beef with taco seasoning. Layer a rectangular casserole dish with the following. Burrito shell, refried beans, seasoned beef, sour cream, salsa, and cheese. Continue to layer until you fill your dish. On the last layer use a burrito shell and top with cheese. Then bake at 350 degrees until hot and bubbly and the cheese is melted, about 20-30 minutes.

Want to make it healthier? Use lean ground beef or ground white turkey. Make your own taco seasoning minus the salt or MSG. Use the whole wheat burrito shells. Use fat free beans, sour cream and cheese. You could also top with shredded lettuce, chopped tomato, onion and avocado. Need less zip? Omit the taco seasoning and salsa.

Tater Tot Casserole

2 pounds ground beef
1 can broccoli and cheese soup
1 cup cheddar cheese
1 pkg tater tots


Brown beef. As it cooks you may leave it plain or season it or add onions/garlic, whatever you like. Drain. Stir in soup. Spread in casserole dish. I use a square one. Top with cheese and then tater tots. Bake at 350 degrees until it browns app. 30-40 minutes

Buffalo Chicken Chili

1 T olive oil
2 T butter/margarine
2 lbs chicken breast, boiled and chopped
1 large onion diced (I used 1/2 of a VERY large Vidalia)
1/2 bell pepper diced
3 stalks celery diced (my guys don't like the texture so I buy celery that has lots of leaves and chop the leaves and only a small amount of celery stalk instead. I do the same thing in cornbread dressing.)
4 cloves garlic diced
1 15 oz can tomato sauce
1 15 oz can diced tomatoes
1 can black beans
1 can kidney beans
hot wing sauce to taste ( I used 1/2 - 3/4 bottle)
3 T smoked paprika
2 T chili powder
1 T cumin
salt to taste

Cook veggies til tender in olive oil and butter/margarine. Add all other ingredients and simmer desired length of time. I served this with plenty of blue cheese crumbles, Tostito Scoops, and extra wing sauce and hot sauce on the side for those who like more heat!
